The Ultimate Bolognaise

This past week, I was twice asked about making fresh sauces for pasta, as apparently, there are a number of folks here who would dearly make a fresh pasta sauce, but do not know how.

Inevitably, a lot of people will fall back on bottled sauces to make their pasta, and I always say this is the worst way to eat pasta.

Bottled sauces contain preservatives to keep the ingredients alive, and trust me, they are never fresh.

And the best pasta sauce comes from having fresh ingredients. For that reason, and despite I have written about previous bolognaise sauces, I keep trying to refine until it gets better all the time.

Today, I want to share with you what I call the ultimate bolognaise sauce. You can pour this over pasta, or serve it with toast or wraps, it's so good any starch will work. It probably is good on its own.

To begin, take 4 plump tomatoes and quarter each of them. Roast them in an oven at 160 deg for an hour, and season them generously with salt an olive oil. Once they are fully roasted, remove them from the oven.

In a saucepan, place the tomatoes and add in 500ml of beef stock and mix well under low heat for about 20 minutes. Add in some chopped basil and season lightly with some pepper. Set aside.

Next, dice 4 strips of streaky bacon and put them in a cold pan and heat it up on slow fire until the fat is fully rendered.

Then add one fully chopped onion and a tablespoon of butter and sweat the onions until they are fully  caramelized. Next, add 3 stalks of celery that has been nicely chopped and caramelized them as well. Add in 4 to 5 cloves of chopped garlic as well.

Take about 3 or 4 portabello mushrooms and finely slice them and add to the mixture. Once all the vegetables have been properly cooked and the flavors wonderfully extracted, add in about a full cup of red wine and let the wine reduce within the vegetables.

Next add about 250gm of minced beef into the mixture and stir thoroughly to break the meat. Next add in the fresh tomato sauce that has been made previously and stir well.

Let the mixture cook slowly over low heat for at least 30 min. Next add the dairy products. First add in quarter cup of milk, then followed by parmesan cheese.

How much cheese is really up to you, as you can also add in the cheese later when you serve. But add enough to flavor the sauce.

Cook for another 10 minutes and taste. It should be finely balanced. Not too sour and just enough sweetness to balance. And there should be a really tasty meaty flavor.

Once you are ready, just serve with fresh pasta or bread.

Resep makanan jepang beef yakiniku

BAHAN-BAHAN :
  1. 500 g daging sirloin iris tipis
  2. 100 g bawang bombai iris tipis
  3. 100 cc kaldu ayam
  4. 1 buah paprika, iris
  5. 3 siung bawang putih, iris tipis
BAHAN-BAHAN SAUCE :
  1. 100 cc kikkoman
  2. 100cc sake
  3. 50 cc white/red wine (opsional)
  4. 50 gula pasir
  5. 1 batang bawang daun potong panjang
  6. 2 lh sdm kecap manis
  7. 2 siung bawang putih, keprek, iris
  8. 1 sdm wijen, panggang
CARA MEMBUAT BEEF YAKINIKU :
  1. Campurkan semua bahan saus, masak sampai mendidih kira-kira 15 menit, lalu dinginkan, saring.
  2. Panaskan 2 sdm minyak goreng, tumis bawang putih dan bawang bombai sampai layu. Masukan paprika sambil diaduk-aduk sebentar. Angkat, sisihkan.
  3. Panaskan 2 sdm minyak dan 1 sdm minyak wijen, lalu masukan daging, aduk sampai berubah warna, tuangkan saus dan kaldu. Aduk rata sampai daging matang dan air tinggal sedikit. Masukan bawang bombai dan paprika,tambahkan wijen.
  4. Angkat dan hidangkan.

BAHAN:
  1. 200 gram beras, cuci bersih
  2. 200 ml santan cair
  3. 2 lembar daun jeruk
  4. 1 batang serai, memarkan

  6. 150 gram daging kambing, potong tipis
  7. 1 cm jahe, memarkan
  8. 2 cm kayu manis
  9. 3 sdm Kecap Manis Bango
  10. 1/2 sdt cuka
  11. 2 sdm minyak goreng, untuk menumis
  12. 3 sdm kismis
BUMBU HALUS:
  1. 4 butir bawang merah
  2. 2 siung bawang putih
  3. 1 buah cabai merah, buang bijinya
  4. 1 cm kunyit, bakar
  5. 2 buah kapulaga sangrai
  6. 1/2 sdt jintan, sangrai
  7. 1/4 sdt merica sangrai
CARA MEMBUAT NASI REMPAH DAGING:
  1. Masak beras bersama santan, daun jeruk, serai dan garam hingga beras mekar dan santan menyusut. Angkat biarkan 10 menit. Kukus beras hingga matang. Angkat dan sisihkan.
  2. Panaskan minyak goreng, tumis jahe, kayu manis dan bumbu halus hingga harum.
  3. Masukkan daging kambing, aduk rata dan masak hingga daging berubah warna.
  4. Tambahkan nasi gurih, aduk rata. Masukkan Kecap Manis Bango dan kismis, aduk rata.
  5. Sajikan nasi rempah daging dengan acar ketimun.

TIP
Sajikan nasi rempah dengan pelengkap acar mentah ketimun dan cabai rawit hijau.

  1. 1000 ml santan dari 1/2 butir kelapa
  2. 150 gram jagung manis, tumbuk halus

  2. Masukkan udang dan kemangi, masak hingga udang berubah warna.
  3. Tambahkan air jeruk nipis, garam dan kelapa parut, aduk rata.
  4. Masak hingga kental dan matang. Angkat.

  1. 500 gram daging kambing, potong dadu
  2. 150 gram kentang baby, kukus
  3. 1 lembar daun salam

  5. 1 cm kunyit bakar
CARA MEMBUAT SEMUR DAGING KENTANG:
  1. Rebus daging kambing bersama air dan sedikit garam hingga daging empuk. Angkat dan tiriskan daging, potong dadu dan sisihkan.
  2. Panaskan minyak goreng, tumis daun salam, lengkuas, daun jeruk dan serai bumbu halus hingga harum. Angkat.
  3. Masukkan bumbu tumis ke dalam air rebusan kambing, aduk rata. Tambahkan daging kambing dan kentang.
  4. Tambahkan Kecap Manis Bango, garam dan dun bawang, aduk rata. Masak hingga mendidih dan matang. Angkat. Sajikan hangat.

TIP
Setelah ditambahkan kecap, masak dengan
cara ditutup pancinya agar bumbu meresap ke dalam daging kambinq.

Resep makanan indonesia sate ikan goreng

BAHAN :
  1. 350 g daging ikan ekor kuning, haluskan
  2. 150 g kelapa muda parut, kukus
  3. 5 lembar daun jeruk purut, iris halus
  4. 1 sdt air jeruk nipis
  5. 1 butir telur, kocok
  6. 12 batang serai, cuci bersih
  7. 500 ml minyak goreng BIMOLI
BUMBU DIHALUSKAN :
  1. 5 butir bawang merah
  2. 4 siung bawang putih
  3. 2 cm jahe muda
  4. 3 cm kunyit
  5. 1 sdt ketumbar sangrai
  6. 4 butir kemiri
  7. 1 sdt gula pasir
  8. 2 sdt garam
CARA MEMBUAT SATE IKAN GORENG :
  1. Panaskan 2 sdm MINYAK GORENG BIMOLI, tumis bumbu halus sampai harum, sisihkan.
  2. Campur daging ikan, kelapa parut, bumbu halus, telur dan daun jeruk. Aduk hingga menjadi adonan yang rata.
  3.  Ambil 1 batang serai, ambil 2 sdm adonan ikan, kepalkan sambil padatkan pada batang serai hingga bentuknya menjadi bulat lonjong. Lakukan pada sisa bahan hingga habis.
  4. Panaskan MINYAK GORENG BIMOLI yang cukup banyak, goreng sate ikan sampai cokelat kekuningan.Tiriskan, sajikan.

TIPS DAPUR
Satai ini memakai batang serai sebagai tusukan, menjadi lebih istimewa karena aroma serai
memperkaya citarasa satai. Selain ikan ekor kuning, bisa juga memakai daging ikan tengiri atau kakap.
